I love Indian food. LOVE. Love it I say.
I have lots of fond memories of going to Indian restaurants with my family growing up, so an Indian themed father’s day seemed appropriate this year.

For Father’s Day I made Chicken Tikka Masala for the first time. Ohh goodness was it tasty.
You see I grew up in Washington DC, raised by Texans who dearly missed Mexican food for the 12 years we were there. In the 80′s and early 90′s you couldn’t exactly get your hands on decent Mexican food in the Metro area. Plenty of El Salvadoran fare, plenty of Asian cuisines but not a lot of Mexican food. To fill the void left by Tex-Mex my family got really into Indian food. To this day nothing makes me happier than to load up my plate at India Palace here in San Antonio, though its pretty much diet suicide when I go there.
I used a recipe featured on Pioneer Woman‘s blog from one of her occasional contributors, Pastor Ryan. It was a total success! I won’t bother posting the recipe or my step-by-step photos because PW has done a fabulous job on her site. If you are feeling adventurous in the kitchen, I highly recommend you give this recipe a try.

Seriously, an amazing dish. This also gets points for one of the best left-over dishes I’ve ever had. For days afterward it was as good if not better than the first go-around.
I’m so glad you tried this one – I was really curious about it! Would you recommend to folks who aren’t very well-versed in Indian cuisine?
E, first of all you are the cutest girl in the world and I heart your blog! I saw this Tikka Masala on Pioneer Woman’s blog and was too afraid to try it…now I’m inspired. Please keep the recipes coming!
