A Father’s Day Feast

I’m one of the luckiest gals around, because this guy is my Dad!

I wasn’t invited, I’m not THAT lucky. Ok they did take me to Europe once 10 years ago, so I can’t complain. Moving on from my vacation envy…My Dad is a pretty cultured guy. He’s sophisticated and funny in a smart-ass kind of way. He is also kind and generous both with his time and money. He volunteers as a golf coach with little kids! How cute is that. He is always there for me, and he has been nothing but supportive of me my entire life. No matter what kind of shenanigans I’ve pulled.

My Dad is also a complete foodie and accomplished cook. Preparing a meal for him can be kinda stressful. He knows good food when he sees it, and he makes great food with ease. I thought about what to make for him for a long time. I decided that I should keep it simple, and make him some homey favorites.

I decided on Logan County burgers from Katie Lee Joel’s cookbook, The Comfort Table. To go along with these ooey gooey cheeseburgers I made some oven fried onion rings adapted from healthy chef Ellie Krieger’s recipe. And to add an element of refreshment I whipped up a quick watermelon & cucumber salad.

Even though I’m still finding my way in my new kitchen surroundings, and these were all recipes I was trying for the first time – it went really well. Sure, he’s a foie gras man, but my Dad can get down on greasey road food too. The biggest compliment he paid the meal was that it was something straight out of Diners Drive-ins & Dives and that it reminded him of a diner in Amarillo he used to frequent growing up.

    Mmm, can’t wait to see the recipes! The burger looks delicious. I have never tried any of Katie Lee Joel’s recipes, do you like the majority of them?
