A Low Cal Easter Feast

I hope you all had a great Easter!  Steve and I relaxed, cleaned up the house and then headed over to my parent’s house for a casual family dinner.  Because I’m too old for an easter basket and I’m watching what I eat, my sweet Mom got me a deviled egg tray and filled it up with yummy deviled eggs for me and Steve to take home.  We’re in heaven as we both love deviled eggs.

My parents put on quite the spread last night.  And even though it seemed pretty decadent, it was relatively healthy and low cal for a holiday meal.  Here’s a sneak peak at what we enjoyed – recipes will be added throughout the week.

soupCucumber yogurt soup!  Served chilled, this dish is super springy and refreshing.  

couscousCous Cous salad with dried cranberries and pine nuts.

asparagusGrilled asparagus.  Asparagus is my favorite vegetable by far!

lambGrilled lamb chops.  Heaven.
