I made these fish tacos a year ago today. I served them with roasted summer squash from the farmers market and rice prepared with onions and garlic. I cooked, plated it, photographed, ate it… but I never shared it with you guys! Why in the world would I do such a thing? Well as it turns out, a year ago today my best friend had her first baby!

Clara’s Birthday Tacos
With all of the excitement of Clara’s arrival added with activities of the holiday weekend that followed quickly thereafter, it totally skipped my mind to post this recipe. And then July turned to August, and after that it was November. All of a sudden and it seemed weird to post a recipe that was more appropriate for summer in November. And then by January I just forgot about this post all together.
Though I have long forgotten how I made these, and I didn’t take good enough care of my recipe notes (sorry ya’ll), I did think it would be appropriate to remember this special day and think back on what I was doing this time last year while Stephanie and Brad were anxiously awaiting Clara’s arrival.
I’ll do my best to try and recreate this recipe (which I arrived at through trial and error) so I can share it with you guys.
