Aren’t plums gorgeous? I love the variety of colors they come in.
Have you met the close cousin of the plum, the Plumcot?
Plumcots are a cross between apricots and plums. They have orangey flesh under that pretty light green skin.
What do you do with plums and plumcots you may be asking yourself? Well they are just delicious sliced and eaten raw… but if you feel like getting your bake on, here are two simple and tasty ideas.
Buttermilk Plumcot Cake
This cake is super moist and dense and only slightly sweet. It makes the perfect companion to coffee after dinner. I love that the recipe is so low maintenance, you just combine the wet combine the dry then combine the two. Done. Bake. Go do it!
Ingredients:
2 1/2 cups all purpose flour
1 tablespoon baking powder
1 cup light brown sugar
1/2 teaspoon salt
3 eggs
1 1/4 cup buttermilk
1/2 stick butter, melted and cooled slightly
zest of two lemons
5-6 plumcots or plums, sliced
1/4 sugar (raw sugar would be neat for this)
Directions:
In a large bowl sift together flour, baking powder, brown sugar and salt. In a another bowl whisk together eggs, buttermilk, melted butter and lemon zest. Pour the wet mixture into the dry and fold until just combined.
Spoon the batter into a greased 8 or 9 inch spring form pan. Arrange the sliced plumcots or plums on the top of the batter, I made concentric circles, but you could do rows or whatever pattern suits your fancy. Sprinkle the top with the 1/4 cup of sugar evenly.
Bake at 400 degrees (seems hot I know) for 35-40 mins or until a cake tester comes out clean.
Easy Plum Crisp
I love this crisp recipe because it is so simple and I can make it using ingredients I always have on hand. You can use almost any type of fruit, I used mixed berries on mother’s day, apples and peaches are nice as well.
Steve and I had my parents over for dinner last night, he made pulled pork sandwiches with smoked Boston Butt on his brand new smoker (post on his smoker coming soon). I served a super yummy potato salad with it and served this plum crisp for dessert.
Sorry there are no pics of the plum crisp, we gobbled it up too quickly.
Ingredients:
6 plums
1 tablespoon cornstarch
1/3 cup sugar
1 1/2 cup quick cook oats
1/2 cup brown sugar
1 tablespoon maple syrup (I usually use a teaspoon of cinnamon in place of maple syrup, but I didn’t think cinnamon would pair well with plums)
1/2 cup butter, cut into small pieces
Directions:
Slice the plums and line the bottom of a 8 x 8 baking dish. Sprinkle plums with cornstarch and sugar. Toss with your hands until well combined. Sprinkle oats over top of the plums, then sprinkle the brown sugar over top. Drizzle the maple syrup evenly and dot the surface with the sliced butter.
Bake at 350 for 25-30 mins.
Serve warm with a scoop of vanilla ice cream. SO yummy!
