Strawberry Cupcakes! Heaven.
I made these last Saturday as part of my baby shower spread for my friend Isabel. I only got a bite of one and I’ve been thinking about them ever since.
I used the recipe for my strawberry layer cake which adapted quite nicely for cupcakes. I used a #8 disher to measure perfect 1/2 cup portions of batter for each cupcake.
I will probably make another batch of these delicious little cupcakes this weekend, because I’ll have several opportunities to pawn them off on other people. I’ll also be making my Chocolate Hazelnut Stout Bundt cake to serve when we have the Boothby’s over for dinner on Sunday.
It is absurd. It is so good you can hardly stand it. It is my most reliable recipe. Trust me, you’re going to want to try this. I made it for the first time as my 26th birthday cake last year. Since then I’ve made it for Kelly’s bridal shower and Isabel’s baby shower.
