So today I decided that I need to become the top brownie baker in all the land. I want to test out recipes and techniques until I am confident that my brownies are the absolute best. It’s kind of scary where my mind goes with a day to myself isn’t it?
My first attempt at mastering the ultimate brownie was a recipe I saw on Everyday Food. As an aside, are you watching Everyday Food? It’s the PBS companion show to the Everyday food cookbook, produced by Martha Stewart – you need to be watching this. It’s really well done and so NOT typical Martha crap. All the recipes are simple, relatively healthy and have a minimum of ingredients and steps.
Here is the recipe I followed for today’s batch. The only modification I made was to add one tsp of cocoa powder to the cream cheese mixture – I wasn’t wild about the look of the cream cheese swirl after an hour of baking. I think you’ll agree that mine are more attractive, yes?
One technique I will for sure be using on other batches is the utilization of parchment lining to help lift the finished brownies neatly out of the pan.
You may be thinking that this is borderline anal retentive and unnecessary, but I must protest that this step is so worth it. It only took a few moments to trim parchment to the correct size and it really helped with the clean up – no baked on brownie goo on my pan!
I would love if you could share your favorite brownie recipe. I’ll be baking a batch a week until I have this down! Also – will someone please volunteer to take all those brownies from me once I bake them?

I love it when you are determined to be the best at anything. But stay away from me with those delicious looking brownies. I love brownies and yours look great. Nuts? I love walnuts or pecans. But I don’t want to be tempted, please.

If you don’t get any takers, just save them and next time I’m around SA, you can simply staple them directly to my belly. Exactly same result as eating them.
However, I am glad that you photographed them beside a glass of milk. Death by chocolate should always come with a chaser.

I just posted a recipe for some pretty darn good brownies… they are the very gooey, rich kind. The chef in you might protest though… it starts with a mix. But you could add the last part to any from-scratch recipe.
I so want to taste one of those ribs, btw!!
