Thyme Roasted Tomatoes

This is a super simple and fast recipe that will make a great side dish for almost any protein. We served these thyme roasted tomatoes at our first dinner party here at this old house, and they went well with cedar planked salmon.

Ingredients:

1 roma or plum tomato per person
Kosher salt
Fresh cracked black pepper
2 tbsp dried thyme leaves
2 tbsp extra virgin olive oil

Directions:

Cut the washed tomatoes in half length wise and arrange cut side up on a baking sheet. Sprinkle liberally with kosher salt. Drizzle olive oil over the tops and add pepper to taste. Rub the dried thyme between your palms to release the flavors then sprinkle over tomatoes.

Bake in a 425 oven for 25 mins or until caramelized.

Note that these lovely tomatoes are hanging out with some Brussels sprouts… more on them later.

You have the option now of jazzing these up with some finely grated Parmesan Reggiano and sticking them under a broiler for a few more minutes… but we’re eating light these days so we quit while we were ahead.
