Now that we are getting more settled here at this old house, we are starting to get into a routine of cooking easy weeknight dinners at home. Interestingly enough, I’m learning that nothing makes my West-Texas-Meat-&-Potatoes Man happier than some good ol’ vegetables! This makes me so so so happy because I spent much of my youth as a pseudo vegetarian.
I’ve always loved the taste of steak, but when I was younger and very serious into ballet, my body just didn’t want animal protein for some reason. When I was 13 we moved from DC to Texas. I stopped taking ballet and begun a love affair with Bar-B-Q. The transition away from my primarily vegetarian lifestyle was a gradual one (honestly I’m still working on warming up to poultry), so throughout high school my Mom prepared meals loaded with veggies as sides. I normally skipped whatever protein was being served and doubled up on spinach or brussels sprouts.
We’re loving the idea of eating primarily vegetarian at home (charcoal grilling will of course continue, baby makes a fine pork tenderloin!). It makes eating light and as close to natural as we can much easier! Now that I’ve gotten that off my chest, I could really go for a cheeseburger! Kidding. Mostly.
