Weekend Recap

Things have seemed so busy lately; new jobs, new workout routines, wedding showers and new recipes have kept me on my toes. Thankfully this past weekend was calm and relaxing. Best of all- I didn’t bake or cook a single meal!

Friday I headed to the gym to log some cardio time. Seriously, downloading Damages to the iPhone is the best thing I’ve done in a while. It helps the time on the elliptical machine just fly by. After the gym, Steve and I went over to my parents house for dinner. My mom made an awesome recipe for pan fried shrimp with green curry cashew sauce. It looked incredibly easy so I will for sure be trying it at home soon.

Saturday Steve and I ran some errands including picking up old picture frames at Goodwill. We got several different sizes and we plan to spray the frames black and arrange them into a gallery wall in our bedroom. A mix of pictures of the two of us treated in black and white mixed in with some of Steve’s art photography will be a nice collection. Saturday evening we had dinner at our friends Whitney and Jose’s house, along with their friends Lindsey and Nate. Both couples became first-time parents in the last six months! It was nice to log some baby holding time, and it’s even nicer that when baby holding time gets old… you can hand them right back. Whitney made a delicious spinach lasagna. I might try to adapt the recipe to make it lower calorie. Lasagna is perfect for weeks when I’m busy with school because the two of us can eat it for days. After dinner Steve was feeling like a movie. We caught a late showing of “I Love You Man,” which was super funny. I was proud of myself for not falling asleep during the movie.

Sunday we lazied around most of the morning and then decided to take a long walk down to Central Market for lunch. The weather was beautiful, and it was nice to know that I burned off almost all of the calories in my brown rice sushi roll in the walk there/back.

I live for lazy weekends! I will admit I have an itch to bake something… I have the day off on Friday and I’m already scheming up some Easter treats.

I logged some baby holding time this weekend too with Laura Anderson’s new baby, Adri! So fun to get a “fix”. :)

Oh, and I found an amazing recipe you should try for Strawberry Lemonade Cupcakes. Go to http://www.annieseats.wordpress.com and click on “cupcakes”. I made them Thursday and they were to die for!

Oh my gosh!! How great is this? I bought tons of picture frames from Goodwill to do a similar arrangement, only mine will be painted matte white and probably just hang on the wall mostly pictureless.
Baby holding time is my favorite!
